About Sauvignon Blanc
Pronounced "soave ig non blaanc", is a green skinned grape varietal originated in Bordeaux in south West France.
Its name comes from the French words meaning "savage" and "white". It is named the savage because of its aggressive growing style.
New Zealand produces some excellent sauvignon blancs. Quality unoaked sauvignon blancs will display smokey qualities without any oak treatment. Often near colourless wines with colours of light straw to light yellow. Young wines may have green tinge and aged wines can present deep yellow and golden. Sauvignon Blanc can present a huge range of flavors from sour green fruits of apples, pears and gooseberries through to exotic tropical fruits of melon, mango and blackcurrant. There may also, in very cool climates, produce note of grass, mint, spice and herbs.
Viticulture, climate and soil
Sauvignon Blancs require a strong acid finish and are best grown in cool to cold climates.
The Sauvignon blanc vine often buds late but ripens early, which allows it to perform well in sunny climates when not exposed to overwhelming heat. In warm regions where the vine is subjected to high heat, the grape will quickly become over-ripe and produce wines with dull flavors and flat acidity.
Central Otago
We have long hot days and cool evenings; we have mostly glacial and alluvial, high draining soils. Although some 800Km South of New Zealand's most famous home of Sauvignon Blanc, Central Otago has the ability to produce very ripe, full flavoured Sauvignon Blanc that retains its acidity.

When to drink
This wine is fresh and vibrant in its youth but has depth of character that will continue to develop gracefully as it ages.

Pan seared salmon with a roasted fennel salad. Keep it simple!
